As a fourth-generation GC publican, Adam has grown up in family business. His great-grandparents purchased the Coolangatta Sands Hotel in 1936, and the family has owned the Robina Pavilion since the 1990s. As the current Head of Government Relations at Coles Group, and Sydney Airport before that, he has extensive experience in directly advising ASX200 company executives and boards and developing and executing strategies on how to align corporate priorities with Government objectives to deliver a mutually beneficial outcomes for communities, customers and companies. Prior to this he was the Senior Cabinet Adviser to the Deputy Prime Minister, navigating & negotiating with Ministerial Offices and their Departments across whole-of-government policy areas to deliver election commitments for the community.

Alphonsus and Lily Fitzgibbons bought their first pub, the Kirabelle Hotel (now Coolangatta Sands Hotel) in Coolangatta in the 1930s, the first of four generations of local publicans. The Fitzgibbons family has owned the Robina Pavilion, proudly serving the local community and employing hundreds of locals since the 1990s. Following extensive renovations, the family was thrilled the Robina Pavilion was voted the #1 pub on the Gold Coast, as voted by the community in the Gold Coast Bulletin, in 2021. In addition to the Robina Pavilion, the Fitzgibbons family owns and operates pubs in South East Queensland and South Australia.
